QUALITY ASSURANCE SYSTEM

Grape juice concentrate is prepared by physically removing water from unsweetened, unacidified, unfermented, filtered grape juice. The juice is produced from sound, clean, mature grapes. Water removing is done by vacuum evaporation resulting 100% grape juice.

All the routine analyses for process control and final product are carried out in our laboratory. Records are kept for all batches making possible to trace back all the processing as well as the information concerning ingredients, raw materials used and production process’s parameters for every lot of juice.

Additional cross laboratory checking are performed in order to verify the repeatability and reproducibility of the analytical methods performed. Most of them are IFU methods (International Federation of Fruit Juice Producers) except when a customer requests a different analysis.

The following analyses are carried out in our laboratory as process control:

  • Polyphenols
  • PH
  • Spin Solids
  • Titratable Acidity
  • Alcohol
  • SO2
  • Color, Haze, Turbidity (NTU)
  • Iron, Sodium, Potassium
  • Sanitation Control

 

Our final product analysis report includes:

  • Basic analysis (such as Brix, pH, TA, Color, S02)
  • Microbiology testing (total count, osmotolerant Yeast, total Bacteria and total Coloforms)
  • Stability trials for color spoilage

Quality Assurance Program

We have in piece a Quality Assurance Program which requires that “blind samples” are taken and tested to control both the readings of the analyses and to draw the control chart for each technique. Furthermore the QAP implies sending cross samples to reputed international and local laboratories in order to check our methods and results.
